To be totally honest, I didn’t like homemade macaroni and cheese until I was in college. And even then I tended to stick with the instant boxed kinds from Kraft, preferably if they came in fun shapes or characters.
But now that I’m living by myself and have a much larger kitchen than in my previous apartment in college (where my living room, kitchen, and dining room were essentially in the same space), I’ve come to love creating new recipes and re-creating favorite childhood dishes. And now I think I’ve found my new favorite–my adult version of mac & cheese!
Rich, creamy, and unbelievably cheesy, this recipe is just the thing to hit the spot when you’re craving comfort food. And what more can you want on a chilly winter night??
GUYS. It was FREEZING in New York City this weekend. Like I’m not joking when I say that the temperatures were in negative numbers when M and I left the apartment on Sunday morning.
But being the busy traveler that I am, I wouldn’t let that stop us from doing everything we had planned and so I dragged the boy around the city with me. And one of my favorite activities we did over the weekend (and I like to think that it was his favorite too, since it was his Valentines gift haha), was spending Saturday afternoon in the Brooklyn Brewery.
I love jewelry, as I’m sure most of y’all do as well. The fact that you can change the look of an entire outfit based on whether you choose to wear a statement necklace or even stud earrings just makes getting dressed (even if it’s just for work) so much fun in the morning. And because of that I’m always on the lookout for new beautiful pieces to add to my jewelry box, whether that be online or rummaging through vintage shops.
Which is why Valentina is one of my favorite new brands that I’ve come across lately. I feel like even with all of the trips I’ve been taking lately, I’ve actually stuck with my new year’s resolutions much more successfully than I have in the past. I’ve been going to the gym 3+ times a week, eating more vegetables and protein (this salmon recipe is amazing!), and, other than all of the Bloody Marias I drank to keep warm in NYC this weekend, I really haven’t been overindulging in alcohol.
But where I have the hardest time keeping myself on the healthy track is when it comes to snacking. If you were to put a family size bag of Smartfood popcorn in front of me, there’s a good chance that I could get through an impressive amount while watching The Bachelor. And I’ve found that even some of my favorite breakfast bars have an impressive amount of preservatives and other ingredients that I don’t believe to be healthy for the body in the long run. After what feels like the longest week of all time, it’s finally Friday!! I can’t exactly pinpoint why this week has felt like it’s dragged on for years, I have a feeling that it’s because I’ve been looking forward to this weekend for so long now. My boyfriend is flying up today (and I’m taking the train down) to New York City where we’re going to spend Valentine’s Day together!
Which is definitely a big change from when I went to the premiere of Fifty Shades of Grey with my friends, and then M and I just watched Netflix afterwards!
Despite his predictions of an early spring last week, it became abundantly clear that Punxsutawney Phil (although unbelievably adorable) was mistaken about that when I woke up on Friday morning to 5 inches of snow. Which is crazy considering the fact that it has been 50 degrees F on Thursday and the sun had been shining basically every day since Jonas hit two weeks ago. But at least I got an excuse to wear my new J. Crew beanie… I wasn’t sure if I’d get a chance to wear it since it’s been so warm lately!
