To be totally honest, I didn’t like homemade macaroni and cheese until I was in college. And even then I tended to stick with the instant boxed kinds from Kraft, preferably if they came in fun shapes or characters.
But now that I’m living by myself and have a much larger kitchen than in my previous apartment in college (where my living room, kitchen, and dining room were essentially in the same space), I’ve come to love creating new recipes and re-creating favorite childhood dishes. And now I think I’ve found my new favorite–my adult version of mac & cheese!
Rich, creamy, and unbelievably cheesy, this recipe is just the thing to hit the spot when you’re craving comfort food. And what more can you want on a chilly winter night??
I feel like even with all of the trips I’ve been taking lately, I’ve actually stuck with my new year’s resolutions much more successfully than I have in the past. I’ve been going to the gym 3+ times a week, eating more vegetables and protein (this salmon recipe is amazing!), and, other than all of the Bloody Marias I drank to keep warm in NYC this weekend, I really haven’t been overindulging in alcohol.
But where I have the hardest time keeping myself on the healthy track is when it comes to snacking. If you were to put a family size bag of Smartfood popcorn in front of me, there’s a good chance that I could get through an impressive amount while watching The Bachelor. And I’ve found that even some of my favorite breakfast bars have an impressive amount of preservatives and other ingredients that I don’t believe to be healthy for the body in the long run. Luckily for me, our friends at Natural Balance Foods have just the solution for us—Nākd Bars.
Being in a long distance relationship can be hard, and expensive, but getting to finally see each other after weeks or even months apart is always worth it. A few weeks back, I flew down to North Carolina to visit M for the weekend since we weren’t sure when the next we’d get to see each other would be. After spending the majority of Saturday sleeping in and then stopping by to hang out with a few of my other friends, we both got all dressed up for dinner at my favorite restaurant in Winston-Salem.
Mozelle’s is known for fresh, southern-inspired cuisine and I have to say that I’ve loved every meal, which is saying something because I ate there quite frequently when my parents were in town or when I could drag one of my friends along with me.
I’m all about breakfast. Breakfast is my favorite meal of the day and I’ve come to terms with the fact that the reason I’m so obsessed with brunch is probably because it gives me an excuse to eat a second breakfast in the middle of the day. And after a morning workout, whether that be going for a run, sweating it out in a class at my gym, or simply taking out the trash, I’m all about hearty breakfasts on the weekends when I have time to get more creative in the kitchen.
Before our weekend getaway in Washington DC, my boyfriend and I did a lot of research about what we wanted to do and see. We came up with the normal touristy activities (i.e. the Mall and all of the museums), but I was especially interested in where we should go out to dinner on that Saturday night.
I’d heard a lot of good things about Le Diplomate from friends and also on Instagram, which I’ve found is a really awesome resource when figuring out what to do on vacation. Plus my boyfriend lived in Paris for a few years, so I figured that it would be a win-win since escargot is one of my favorite french cuisines and it’s a dish that Le Diplomate is famous for!
I love brunch. And not only do I love to eat and drink at brunch, but I also love to talk about how much I love brunch.
So when I say that I had one of the best brunch experiences a few weeks ago, it should not be taken lightly. When my boyfriend and I were in Washington DC, we met up for brunch with one of my best friends from home at a restaurant that I’ve been wanting to try for a while now–Boqueria. They have locations in both New York City and DC, and I’m kind of surprised that I’ve never gotten around to stopping by before during one of my trips into the city since I live so close.
Anyway, the reason that Boqueria is amazing and one of my top restaurants to brunch at is because not only are drinks bottomless but so is the food! I can’t believe that more restaurants haven’t caught onto this trend because I’m a huge fan, and I’m sure most people would be as well!
