Now that I’m paying my own credit card bill and rent (aka pretending to be a real adult), I’ve become a huge fan of recipes that are simple to cook and are cheap on a budget. So when I was writing up my grocery list the other week, I remembered this one chicken dish that my mom used to make when I was little and was my absolute favorite. I quickly texted her for the recipe and ended up making it just the next day.
This one pan chicken & veggies recipe is so easy to make, and I usually throw everything together on Sunday afternoons so that I have leftovers to take to work for lunch for the rest of the week. Honestly, the hardest part of this dish is cutting up the onions because my eyes get so sensitive! And also because I’m useless with knives and always just missing nicking myself on the blades… Which is really killing my dream of being on Chopped one day haha! Plus I’ve got to work on my plating; this may not be the prettiest recipe but it’s absolutely delicious!
To be totally honest, I didn’t like homemade macaroni and cheese until I was in college. And even then I tended to stick with the instant boxed kinds from Kraft, preferably if they came in fun shapes or characters.
But now that I’m living by myself and have a much larger kitchen than in my previous apartment in college (where my living room, kitchen, and dining room were essentially in the same space), I’ve come to love creating new recipes and re-creating favorite childhood dishes. And now I think I’ve found my new favorite–my adult version of mac & cheese!

As I’ve said again and again, there’s nothing that I like more than a toasted bagel slathered with way too much cream cheese to start out the morning. But with the new year, I’ve been slowly changing my diet so that I’m not eating quite as many processed foods and I’ve also been trying to find ways to sneak more fruits and veggies into my diet. And so that’s how the recipe for my Green Goodness Smoothie was born!
I’m finally heading home for the holidays! I’ll be flying down to South Carolina later today and spending almost a week doing nothing but sleeping, eating, and cuddling with my dogs. And you know what? I’m really looking forward to a relaxing week at home after all of my traveling lately. Plus I won’t have to worry about cooking for myself for a few days which is a gift in of itself!

I’m a little embarrassed to admit this, but I didn’t used to like avocados. Which is a little crazy considering how often I eat them nowadays… Aka at least once a day. I’ve even been known to bite straight into an avocado when a knife can’t be found! Plus I’ve heard that the new Hollywood diet includes eating tons of healthy fats, which I am more than happy to do if it means I’ll be able to look like Jennifer Aniston in 20 years.
Avocado “fries” are a play on one of my guilty pleasures–real french fries. With all of the flavor and none of the guilt, this recipe is perfect for when you want a hearty snack for a Netflix binge or atop a burger for dinner (which actually sounds like a wonderful idea now that I’m thinking about it)!
I’ve always been a huge fan of spicy food. I even once drank hot sauce on a dare in elementary school (gross, I know…). So when I was first introduced to Sriracha sauce when I was abroad a few years ago, I fell in love and it’s been my favorite hot sauce since then.
Because I have such a huge bottle of Sriracha in my kitchen and don’t want it to go to waste, I’m always trying to come up with new recipe ideas that I can use it for. And you know what? I think that I’ve discovered my favorite recipe EVER. Along with spicy food, I’m also a huge fan of Chinese food but I don’t order it much because it makes me bloat like a motherf*****. And no girl likes waking up the next morning feeling like a hippopotamus. Am I right??
So instead, I made my Sweet Sriracha Chicken to satisfy both of my cravings. And it took even less time to make than it would have taken for my meal to get delivered to my doorstep!
